Net-filter Coffee (Cà Phê Vợt)- in Vietnam . This method is popular among stalls operated by those of Chinese descent in old Saigon, before French-style filters (cà phê phin) started dominating the market. Now only 3,4 coffee shops using this method. The instrument used to filter the coffee looks like a fine mesh fishing net you’d find at an aquatic store. ‘The filter is propped over an empty stainless steel jug. The barista (usually the owner) would spoon some coffee grounds... into the net and then add hot water to the mix, letting the coffee net sit in the basin for a few seconds before adding more water and quickly lifting the net three times. She then would set the filter to the side and pour the contents of the jug into tall glasses’. And then it will be served to customers either black coffee with sugar (cà phê đen) or with condensed milk (cà phê sữa đá). . It seems that everyone in Vietnam is a coffee fan. Why Vietnamese coffee is different? Distinctively STRONG! . Let me tell you since I am Vietnamese and a coffee snob😛 . 1. The bean... Vietnam is the world’s second largest exporter of coffee. Our coffee beans are almost always Robusta. Robusta is almost twice as strong caffeine wise (2.7% wt) comparing to Arabica (1.5%), making it a bit more bitter. Furthermore, it has 60% less lipid and sugar than Arabica, so the taste is sharp and less casual than your usual cup of coffee. Unlike Arabica, which is mellow and easy-drinking, Robusta is often compared to burnt tires and rubbery in taste with a thick lingering taste and higher acidity.
2. The way its roasted Our coffee bean is usually intentionally over-roasted, making it quite bitter.
3. The way its brewed To make coffee we use aluminium drip filters. We take time to enjoy the coffee. If you go to any coffee shop in Vietnam, you would see people talking, eating breakfast while waiting for their coffee dripping. Drip coffee is very thick. A frequent way to enjoy this is with condensed milk and ice (cà phê sữa đá), and it naturally maintains a strong taste. Well but there's more to Vietnamese coffee than just a hefty taste. Coffee time is a chance for friends to catch up. We enjoy conversation with a strong good coffee😛
*The caffeine percentage in Robusta is toxic to many bugs. So Robusta is highly resistant to insects and have a better yield-per-area, so it can be made for a lower cost, with little to no chemical use. Its also packed with higher anti-oxidants (7-10%) comparing to Arabica beans (5.5-8%). So why not like Robusta 😛? Stay awake and young✨😁

Phương pháp tiệt trùng hạnh nhân!!! Mấy ngày gần đây mình tìm mua Almond (hạt hạnh nhân) organic cho em gái mình, mình mới biết được rằng hạt hạnh nhân từ Mỹ hầu hết được tiệt trùng theo phương pháp PPO (một phương pháp khử trùng rất độc dùng propylene oxide). Lý do Mỹ đưa ra quy định tất cả các hạt hạnh nhân phải được khử trùng là vì 2 dịch salmonella bắt nguồn từ hạnh nhân xảy ra năm 2001 và 2004. Hạnh nhân có 4 phương pháp khử trùng: xử lý hơi nước (steam processing), xử l...ý nhiệt độ cao (rang), chần và xử lý khử trùng bằng propylen oxit (PPO). Trong đó 2 phương pháp chính được sử dụng là xử lý hơi nước và PPO, nhưng vì PPO chi phí rẻ nên hầu hết farmers ở Mỹ dùng PPO. Như ở đây mình mua hạt hạnh nhân xử lý tiệt trùng bằng hơi nước thì giá đắt gần gấp đôi hạt hạnh nhân tiệt trùng bằng phương pháp PPO. Nên các bạn chú ý khi mua hạt hạnh nhân từ Mỹ tại Việt Nam thì cố gắng tìm hạnh nhân được tiệt trùng bằng phương pháp hơi nước. #fyi PS: You're welcome ;)

Unfortunately, my recent visit to Serenity Shop left me disappointed. The coffee was served cold, and the staff at the 1030 Delta Drive, Corpus Christi, Texas 78412 location seemed indifferent. I won't be giving it another chance.
